Grilled Pork Tenderloin


Marinade:
1/2 C. soy sauce
2 oranges, juices
1 lime, juiced
1 T. Dijon mustard
1 t. ground ginger
1 clove garlic, crushed
1 T. chopped scallions
1 pork tenderloin (about 12 ounces)

Preheat an outdoor grill or preheat oven to 350 degrees F.

Remove pork tenderloin from marinade and pat dry. Brush olive oil onto grill and over meat for extra flavor. Reserve marinade. Grill tenderloin until cooked through, about 30 minutes to 40 minutes over medium heat. Or roast in oven for 35 to 45 minutes.

Allow meat to rest about 10 minutes before cutting into 2-inch serving pieces.

While meat is grilling, bring reserved marinade to a boil in a small saucepan, then lower the heat and gently simmer until it is reduced to about 2 tablespoons. Stir occasionally. Drizzle a small amount of marinade over each piece of meat.





Chocolate Chocolate Chip Pound Cake




Ingredients:
1 pkg dark chocolate cake mix
1 pkg instant chocolate pudding mix
1 16 oz sour cream
3 eggs
1/3 cup vegetable oil
2 cups semisweet chocolate chips

Preheat oven to 350. Grease a bundt pan. Mix together ingredients and pour in pan.

Bake for one hour and then cool. Top with powdered sugar!

Use Adolph's meat marinade on ribeye steaks overnight in fridge. Serve with twice baked potatoes.

Pasta Salad and Baked Fish


Summer Pasta Salad

Salad:

1 1/2 lb. pasta of your choice (I used bowtie & radiatore)
2 cucumbers, chopped
4 Roma tomatoes, chopped (or 1 pt. plum or cherry tomatoes, halved or quartered)
1 can/jar artichoke hearts, sliced (mine were marinated in oil, etc.)
25 pepperoni slices, quartered
1 small onion or 1/2 large onion, finely diced
1 heaping Tbsp dried parsley or 2 handfulls fresh parsley (chopped)
Shredded parmesan cheese, to taste

Dressing:
1 c. white vinegar
3/4 c. sugar
3/4 c. oil
3/4 tsp. salt
1/2 tsp. pepper
1 tsp. dry mustard
1 1/2 tsp. garlic salt

1. Cook pasta according to package directions. Drain, and run cold water over it until it's cool.
2. Mix together salad ingredients.
3. In a separate bowl, whisk dressing ingredients and immediately add to salad. Toss well.
4. Chill before serving.

Baked Tilapia

Thaw frozen tilapia under cool running water until soft (<5mins)
Place in over and sprinkle generously with paprika and lemon juice

Bake at 350 for approximately 30 minutes until fish is flaky.
