Chicken Tortilla Soup



This recipe if from my Trisha Yearwood cookbook.  Sounds like a good Halloween meal.

Ingredients

  • 3 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 medium onion, finely chopped
  • 2 tablespoons all-purpose flour
  • Three 14-ounce cans chicken broth
  • 4 cups half-and-half
  • One 10.75-ounce can cream of chicken soup
  • 1 cup prepared salsa, mild or spicy
  • 4 boneless, skinless chicken breasts, boiled, drained and shredded
  • One 15-ounce can black beans, drained
  • One 15-ounce can kidney beans, drained
  • One 15-ounce can whole kernel corn, drained
  • 2 teaspoon ground cumin
  • One 1.27-ounce packet fajita seasoning
  • One 16-ounce bag tortilla chips
  • 8 ounces Monterey Jack, grated
  • 8 ounces sharp Cheddar, grated
  • 1/2 cup sour cream

Directions

Melt the butter in a large pot over medium heat. Add the garlic and the onion and saute until softened, 5 minutes. Add the flour and stir well, cooking for 1 minute more. Add the broth and the half-and-half. Stir in the cream of chicken soup, salsa, chicken, beans, corn, cumin and fajita seasoning. Continue to simmer over low heat for 15 minutes.
Crumble the tortilla chips into individual bowls and top with a ladle of soup. Sprinkle each serving with cheese and add a dollop of sour cream.

Herbed Round Steak

I don't have a photo of this dish but my best friend cooked this in my crockpot when we had a death in our family and I still remember how good it smelled several years later.  Serve over noodles cooked in chicken broth.

2 lb round steak or roast 
(cut into cubes and brown in oil on all sides and then place in crock pot with below ingredients.)
1 can cream of chicken or cream of celery
1/2 t. oregano
1/4 t. thyme
a few dashes Worchestershire sauce
1/4 t. pepper

Cook on low in crock pot for 10 hours or high for 4-5 hours.

Ikea Meatballs



I found this recipe on a blog somewhere and I can't remember where it was, but I plan to try this recipe in the next few days.

1 package prepared frozen meatballs (small grocery store sized bag)
1 can cream of celery soup
1 can french onion soup
8 oz. sour cream
small can sliced mushrooms.

Place in crockpot on low for 6-8 hours and then serve over mashed potatoes or cooked egg noodles.

Sausage Dip

Neese's Hot breakfast sausage, cooked and drained
2- 8 oz. packages cream cheese
1 can rotel

Add cream cheese and rotel to cooked sausage.  Place in crock pot to keep warm.

Serve with Tostidos

Crockpot Beef Stroganoff

This is one of my daughter's favorite recipes so I thought I should post it so I will never lose it.
1 can cream of mushroom soup
1 can beef broth
2 pounds stew meat (1 inch pieces)
1 cup sour cream
2 cups noodles
Combine soup and broth with stew meat and cook in crockpot on high for 3-4 hours and then lower heat to low for 3-4 hours. Stir in sour cream and uncooked noodles for the last 20-30 minutes. (Originally the recipe states "cooked" noodles, but one day I did it with uncooked and it saved a step and I have done it that way ever since that time.)
This is the ultimate comfort food.
