Corn Dip

I haven't tried this yet, but it looks really good.


Ingredients
2 cups Frozen corn, thawed, well drained (I used 2 bags which fed about 8 hungry people)
1 pkg. (8 oz.) Cream Cheese, softened
1 cup Mexican Style Shredded Four Cheese
1 can Rotel
1/24 tsp. Chili Powder
1 box Wheat Thins/Triscuit Crackers

Directions
Preheat oven to 350°F
Mix all ingredients except chili powder and crackers until well blended
Spread into 9-inch pie plate (I used a bakeable ceramic dish)
Sprinkle with chili powder
Bake for 20-25 min. or until golden brown and bubbly
Serve hot with the crackers

Vay-Cay 2010

We finally were able to get away for a few days and prove the ocean is still there. It's funny when you go for a long period of time without a vacation it doesn't take much to make you happy. I think we all had a really good time with just some sun, relaxation and a few good meals in new places. Thank you Lord for making it possible!

Mimi's Cafe


While visiting the apple store we tried a new restaurant and it was very yummy.
