Mock Apple Pie

This is one of my daughters favorite things.  It is called "mock" apple pie, because there is really no apple in it, but it tastes like there is.  I always liked it because there was a lot of time spent peeling apples.  It even kind of looks like apple pie.

Bring to a boil:
2 cups water and 1 1/4 c. sugar.

Add in 40 Ritz crackers.  Cook for 10 minutes (med to med-low). DON'T STIR!

Pour into unbaked pie shell.

Sprinkle with margarine and cinnamon.

Bake at 350 for 25-30 minutes.

(Recipe may be doubled.)
